I mixed a bunch of fruit in a bottle of dry white rum, and put it in the closet. When will it be ready?

How long do homemade liqueurs need? I put rasberries mostly, and lemon jiuce and other stuff in the bottle. The colour changed to a light rosy red after about two days. How long should it sit before it's drinkable? The fruit all looks dead at the bottom of the bottle now after four days. I'm just not sure what to do with it from here.


Answers:

General rule of thumb is about 2 weeks. Give it a good shake once a day so that you get as much flavors out of your berries or fruit during the process, but you're not going to get as much out of it in 2 days as you can in 2 weeks.

One thing you might try is to do two bottles and strain one after a few days while leaving the other. Then you can compare the two and find out if the extra time makes any difference or not. If not, you can do it again in less time. If so, you know how far in advance to make it and have it turn out well in case you want to make a batch for a particular occasion.

More time generally will not hurt, though.
