What types of red wines does blue cheese go with?

What are some names, types, years, etc.


Answers:
Red wines with blue cheeses ( ie: Danish Blue, Stilton) do not a good match make.....wine will taste tannic and perhaps offer a slight metallic taste. Best reds in a pinch would be young, soft fruity varietals such as New World Merlot or Zin or perhaps something along the line of a Beaujolais-style wine with minimal tannic structure. If I had to go red, I would prefer a slightly fortified wine such as Banyuls or Maury from France. Best choice overall would be a nice Port of your choice.

It really all depends upon your own wine palette. You should be willing to ask yourself how sweet, dry, or somewhere in between you are willing to go. I personally enjoy fruity appellations. Regrettably, these are usually confined to white wines like gewurtztraminers, rieslings, or the ever popular trochenbeerenausleses, all german varietals. If you like bubbles, go lambrusco. If not, settle for a real American original, or zinfandel. You won't be sorry!
