In fact one technique of sauce making is reduction sauce. Added to the reduced wine (port, red, white, whatever) is stocks or lightly thickened stock (fond lie) in turn this is reduced further. To finished the sauce seasoning is adjusted herbs & garnishes are added and the sauce the paired to the entree. This is done with great skill and is one reason some restaurants are very expensive. Not many chefs (real chefs) can handle the great number of sauces over the course of an evening. Imagine havine 10, 15, or 20 of these sauces going at one time. It takes a lot of training, experience, and skills.
