Ale yeast question?

I have been home brewing about 9 months now and I am curious which ale yeasts are good? I usualy get kits and use the yeast that they include but now I am starting on making my own recipes. thanks!

Although I do not have a specific brand name for you I can suggest a liquid culture. When I bought ale yeast in the past there were several brands of a liquid cultures available. They have the advantage of being more active. The yeast comes in either a foil pouch or a plastic vial.

The yeast in the pouch had a starter culture within a capsule that is broken a couple of hours before it is needed. This activates the yeast and it begins aerobic respiration (increasing in cell numbers) Greater numbers of yeast cells will produce a better beer. In addition, many homebrewers have starters (wort) that they have sterilized and pitch this starter pouch into. This increases the cell numbers even more. When doing this make sure the wort/starter is well aerated. The reason for this is yeast in the presence of oxygen will increase (divide) in numbers. Once the oxygen is utilized/depleted the yeast go into anaerobic fermentation (the good alcohol producing) state.

Sorry I have no brand names but your local supplier will be able to help. Most carry the actual yeast from brewers in several countries.
