It is true that the best known and most common microorganism used in fermentation is yeast. But bacteria is also a source of fermentation.
The waste product of the fermentation pathway is indeed ethanol and CO2 and well as some other flavors and aromatics.

This occurs in all fermentation and is a matter of degree. Foods that are made through the fermentation process (using the bathroom as you say) include: cheese, sour cream, yogurt, buttermilk, sauerkraut, soy-sauce, fish sauce, wine, beer, distilled beverages, and more.

The process of fermentation in found in food production, food spoilage, pharmaceuticals, industrial applications such as ethanol & methanol for engines.
