Well it depends on the Champagne. Ultra Brut/Non-Dosage and Brut are very dry and, as all Champagne generally is, acidic. If you try anything sweet it will make the Champagne seem so dry it will lose the appeal. 70% or greater cacao would be the best choice but the bitterness and the acid in the Champagne may be too much.
The best idea would be a good Demi Sec or Doux Champagne and a 50-60% cacao chocolate. The residual sugar int he Champagne and the lower bitterness in the chocolate should pair up better but in all honesty the two are not a great match. I've never had great success.
The beauty of chocolate is the lingering lipids that melt in your mouth. The acid of Champagne strips that off instantly and the white/green fruit profile of it isn't ideal for the dark, earthy flavors of chocolate. Try it out and see what you think. You may like it.
