How long does Dry Sherry keep after opening?

After opening, how long will a bottle of dry sherry remain good for using in recipes? What's the best way to store an open bottle?


Answers:

Since sherry has a higher alcohol content than other wines, it will tend to keep longer. What happens once you open it is that you allow oxygen (from the air) into the bottle which starts oxidizing the wine. (In a sealed bottle, there is enough fermentation going on to put a small layer of carbon dioxide on top of the wine.)

You sherry will keep for four to six months once it's opened, but you should keep it in the refrigerator to slow the oxidation. You can probably use it after that, but it will begin to sour, and will have an adverse effect your food.
