Answers:

It's ALL about sterilization.

When making wine, you need to completely sterilize all your equipment and your juice. The most common practice is to clean all equipment thoughly, then when you think it's all clean, sterilize it with sulfur water made from Campden tablets and water. This will kill molds and bacteria that might be present.

When preparing your must, mix the appropriate amount of Campden tablets in with your juice to killl and wild yeast or bacteria, wait 24 hours, then introduce your yeast of choice.

Keep everything sealed up. Some people use Vodka in the water trap to kill any mold/bacteria that might 'backwash" into the brewing bottle. Once your wine is up to 8-10% Alcohol by Volume, it should be pretty safe from outside mold or bacteria.

I hope that helps!
