Answers:

When testing each barrel of Jack, the Taster (the luckiest guy on the planet) looks for the key aromas and flavors that make Jack Daniels so recognizable. Single barrel is fermented and aged just like #7. The difference is that Single barrel is given much more care. When a taster finds a barrel of whiskey that exemplifies the Jack Daniels standard, they will pull it off to the side. Each bottle of Single barrel is then hand filled and packaged, so as to ensure the quality is not comprimised.

Gentleman's Jack is aged again after it has reached maturity to give it a smoother flavor.
