Simmer fifteen pounds of orange blossom honey in one gallon of water for thirty minutes with 4 ounces of finely chopped fresh ginger.
Add to cold water, topping off to six gallons. Pitch Wyeast D-47. Rack After two weeks. Rack four weeks later. Then eight weeks. After a year, sorbate it to stop fermentation. Back sweeten to taste.
