Why does my ouzo go white when i add water?


Answers:

Ouzo gets its flavor from an oil called anethole (which is the essential oil from anise). This oil is soluble in alcohol, but not in water, so when you add water, the oil separates causing a while emulsion (fine droplets which reflect white in the light) which is a process called louching.
