Batch production: How much beverage your are making at one time.

If I'm experimenting with a new recipe, I might only make a 2 liter or 1 gallon batch. Most of my home wines are made in 5 gallon batches. Many commercial wineries have 500 gallon stainless steel vats, each vat would be a batch.

Something produced in a start to finish production manner as opposed to continuous production ala assembly line.

Regarding wine and beer, I don't know other than all beer is made in batches; there is no other way. In distilling, batch stills operate from start to finish and then have to be restarted again with another "batch" instead of continuous distillation stills that are fed the raw material and produce the alcohol continously (often used for vodka).
