I meant like, when I used to work in a pub, all I saw was just the bartender connecting the barrel to the tap, let the first few drops run, and then out comes the cold beer!

It could be glycol. Glycol is used to cool the beer lines, kind of like having a mini fridge wrapped around the lines in a foam tube. the beer lines may have also been run through a cold box or ice, that's when they add extra beer line and coil it, and cover it with ice so by time the beer runs through all of the ice it comes out cold. Usually these systems are hidden and you would never see them without looking for them.
