What sort of drinks with spirits are nice with the following desserts, please?

Could you possibly note a coffee or tea also? Or some similar drink .... like hot cider as a side to go with something with spirits .....thank you so much.
p.s. If you have another dessert to recommend w/ its drink you like, could you add that, too?

we do bake "Stollen" with Jamaica rum, but we have a cup of coffee when we eat it. In Hamburg you can add a shot of Hennesey.

I had a little think and it would have to be RUM every time for everything
a nice rivesaltes would go with them all. Although that is wine not spirit. A cointreau would go nicely with the cheescake and a good Armagnac will go with a prune and almond tart

there is this cool drink but i don't know what its called.........basically you can use an alcoholic or nonalcoholic apple seltzer type drink.........you pour it in cute wineglasses and drop a peach slice in the bottom of the glass. Also hot mint tea would go great as a side drink.
