It would depend on the brand, but is likely somewhere between 20 and 40 percent. McCormick (a supermarket brand) is 32 percent alcohol. The one linked to below is 35 percent alcohol. With extracts, higher alcohol content generally means higher quality.

Not much. It will dissipate when you cook. A small amount goes a long way. I like to stir it into cool whip for a dessert topping.

You can buy extracts made with a glycerin base and no alcohol. They don't taste quite as good but are safe for alcoholics. (not all recipies involve cooking the alcohol out)
