One of the mottos used in the culinary world is 'Don't cook with wine that you would not drink'. According to Alton Brown (Good Eats on the food network), they started salting cooking wine so the help in the kitchens wouldn't be drinking it. And the wine that ends up as cooking wine is subpar even before it is salted. (Another thing AB says is that you can't cook ALL the alcohol out of a dish).

In general, it is best for YOU to control salt content. So use as many salt free or low sodium ingredients as possible (like use low-sodium broths & not use spice mixes that contain salt), then season (salt) the recipe with the appropriate amount for it to taste good.

But if you have a recipe that REQUIRES wine & you simply can't get the real stuff, you will have to account for the extra salt that it adds to the recipe.

No, it is considered "non-alcoholic" because they add a bunch of salt to it.

If you try to drink it in any quantity that will get you intoxicated, you will get sick. So, anyone can buy it. Just like anyone can buy Non-alcoholic beer.

On rare occasion the computer in the grocery store will mishandle the product and ask for a date of birth. In that instance you should point out the label and exclaim that this is only used in cooking, and is considered "non-alcoholic"

No. However, because cooking wine has so much salt, it isn't as good for cooking as regular wine. So, when you're old enough, and if it won't hurt your reputation, buy the real stuff.

No, because of the salt. After you turn 21, use regular wine instead because it has much better flavor.
