What's your technique?
Answers: Pour at a 45 degree angle til half way, leave to fully settle til totally black pref 5 mins, I start pouring when I see a guinness drinker in the pub half way through a pint so their not kept waiting for a good pint. Then I top up the pour while using the stream from the tap to put a shamrock in on the head. Leave to settle whist using till for the payment then voila perfect settled pint. You should never scrape a head of a guinness or have to poke the shamrock in the head. Source(s):
Working many bars over 15 years and drinking plenty of guinness!!!!!!!!!!!!!!!! lol Fill glass halfway and STOP. Wait till all cascading is done.
Fill the remainder and serve.
I absolutely HATE it when bartenders try to pawn off a single-pour (all at one time) Guinness. It tastes terrible compared to the proper way above. MJ they are all out on the pull at the moment you will have to wait until they come home. tilt glass 45 degrees pour half a glass let it settle pour rest slowly tilting glass upright leave at least half inch of head use a stirrer put a shamrock into froth. Smooth and slow. 3/4 fill, leave it as long as the customer allows. Top up and scrap off. Final top up show off my creative artistic side by adding a shamrock in the head. Mmmmmmm i being a guinness drinker like half pulled then left to settle and then topped up just as im finishing the previous one Most pubs ive been to other than ireland pour it up to the top like lager,instead of letting it settle at 3/4 then topping it up.Makes all the difference PB_GenX got it right....a slow pour half way up, by turning the handle on and off, let sit, then do the rest the same way....you should have the perfect head, perfect enough to draw a shamrock on the head....serve to your customer and he/she will be forever grateful. It has to be done very slowly,I remember working in a bar when 12 Irish priests came in just on last orders,all wanting Guinness and I only had one pump,there were half full glasses all over the place waiting to be topped up.Just as well I'm an optimist or they would have been half empty!!!
