The definition of 'technician' is general is someone who operates a piece of technology. For example, your x-ray technician operates the x-ray technology; your auto technician operates auto diagnostic and repair technology.
So a technician in a brewery would operate brewing technology, which includes running the malting machinery, controlling temperature and agitation in the mash tun, maintaining efficiency in the cooling coils, monitoring fermentation with the hygrometer, etc etc etc. There are probably special technicians to keep the bottling and canning and packaging machines stocked and running.
I used to work as a salad technician :-)
