Why is red grape juice red?!


Question:

Why is red grape juice red?


I found that red wine is red not because it is made from red grapes, (so is champagne) but it's red because it is allowed to forment with the skins and seeds for much longer than white wine, the juice of any grape is white. Grape juice that you get in a bottle isn't formented, so why is it red?


Answers: I believe they macerate the whole grapes, skins and all, which will stain the juice and then filter out the solids.

Although the flesh and juice of most red wine grapes is indeed white, there are some varieties that have red flesh/juice.

They do not use the same varieties for winemaking as they do for the table* and juices so it may be that they are also juicing red fleshed grapes.

see my profile Food colors? In red wine they leave the skin on the grape and this gives it the colour. White wine can be made with red grapes but the skin is removed so as not to contaminate the wine with colour.
