How can I shut down my wine.?

I make wine in 5 gallon carboys. My wine is useualy done in about 4 months. My white grape wine has been cooking for almost 8 months. I added sodioum benzoate to shut it down and it still continues to cook. How can I shut it down?


Answers:
When they make dessert wines, they spike it w/ alcohol to kill the bacteria. This is why dessert wines sneak up on you. But it's effective at stopping it from "cooking" any further.

If you cool the wine too a temperature where fermentation can't occur it will stop the process.

Mattys right, do you have a fridge you can put it in? Take it to 45 degrees, it should stabilize, and the yeast will stop working.
