If I make apple wine, and freeze the water out, is that illegal?!


Question: Technically it's not distilling (no heat), but it is concentrating...

Also, how can I find the alcohol percent of the resulting sweet liquor? My hydrometer is for beer/wine so it won't really work here...

It is illegal in the USA because the government looks on it as distilling. If you know the starting alcohol of the wine allow half the ice to melt and you have doubled the alcohol. By the way you can only make 200 gallons of beer and/or wine a year as a head of household in the US.

if you make up to 500 gallons a year of beer or wine,for personal use, its pretty much legal
Alcohol freezes at -180oF and boils about 165o and evaporates more quickly than water. I believe the alcohol will 'sublimate' before the water unless you can separate them.
They sell little glass tubes that tell you the alc % in wine making stores where you might get a more knowledgeable opinion.
Perhaps you could make grape juice wine!
