Can I can a tomato based pasta sauce with wine in it?

I have a wonderful Bolganese (?) recipe that I'm wondering if I can can. Would this risk any of the flavor if I did? or would it be just fine or should I just stick to canning tomatoes or sauce w/o wine in it...does anyone out there know?


Answers:
I always make pasta sauces with wine. Usually after sauteing the meat or vegetables for the sauce I deglaze with wine. For Bolognese Sauce I'd probably use a dry red wine. If your recipe calls for the addition of water or stock just use a little less, since you'll have the extra liquid from the wine. The flavor should be great!

I would jar it. I have seen sauces w/wine in jars at the grocery store. good luck.

I know of no problems with canning products with wine (or other alcohol). My aunt used to can brandied cherries with no problems at all.

I use wine all the time (or even beer some times) in my red sauces. Just add a few splashes to the sauce as it's cooking.
