There are lots of variations, this is the one I know and I hope it helps

Basicaly use:
Fresh ginger root (1 cup peeled, finely chopped)
2 Lemon rinds
4 Tsp Honey, to taste
Boiling water (2 cups)
Seltzer or Club Soda

Put the ginger and lemon rinds in a small bowl with the honey. Pour in 1 cup boiling water (or just enough to cover). Let steep for five minutes.
Strain and chill. When ready to serve, add the seltzer water or soda, add a lemon juice and serve with ice cubes.
