Start her out with a fabulous dinner...eating before is VERY important. Than chose mixed drinks that don't include a sugar based mixer. Sweet mixers cause a terrible hang-over/head-ache the next morning. If sweet is a choice, I would pick screw drivers or cranberry juice and vodka. Natural sweetness mixed with top-shelf spirits are the best.
I'm a mixed drink girl myself. If she wants to take it easy and she likes cherry coke do amaretto and coke or an ameretto sour (that's like 7up). I love tequilla sunrise (grenadine and oj) Mai tai is great as well (run, orange falvored liquor, and pineapple juice)
Why don' you take her out to dinner before you go to a club, take her to a very romantic restaurant for a candlelit dinner and give her roses. Then after that you can go to a club and try some wild drinks (drink wisely) and give her the most memorable 21st birthday! She'll remember this for a very long time and big time points for you!
