Wine not fermenting?!


Question: hommade apple blueberry wine not fermenting. PA is 13.
temp is 70. used campden tablet to sanitize. Waited 20 to 22 hrs added yeast. It's been 36 hrs, no activity. Should I wait longer? Pitch new pack of yeast? will adding more yeast cause too strong fermentation or off flavors?
used apple juice concentrate and blueberry extract. Added 2 pds of sugar for a 1 gallon batch. No nutrients, or pectin enzyme added.

There is no problem to add more yeast. In fact you might try to add a different strain to see if the properties will be more suitable for the conditions.

But my main concern would be wether the apple juice or extract you used had preservatives in it. Check the labels of the juice, if it has sorbate in it, I don't think you will be able to ferment it.


If you are OK there, I would go with ec-1118 yeast and some yeast nutrient.

your yeast might be dead..... this is a common problem and yes if you add more it could change the flavour a litlle bit. my suggestion would be to strain old yeast out and replace with fresh live yeast

Check your concentrate - if it has been pasteurised then it won't ferment whatever you do.
