I typically use white wine for chicken and seafood. Red wine is the best for red meats. I would suggest looking at www.cooking.com or any of your favorite chefs recipes.

Coq au vin. The web is full of recipes, but the basic idea is pretty straightforward: simmer a whole chicken in a bottle of red wine and some stock.

If you want a basic recipe:

saute a couple of carrots, some celery, and an onion. Toss in a whole chicken, and turn so that the skin browns a little. Pour in a bottle of red wine. Add chicken stock or broth until the chicken is covered. Throw in bay leaves and some salt, peppercorns.

Simmer an hour or so.

So good.

The French can barely cook without wine. So go here there will be lots of recipes.

For the record, coq au vin is cooked with red wine but it really classically only gets mushrooms and small onions. It is very very good.

Usually with chicken and fish the wine is white.

Osso Bucco is good

I use Alton Brown's "Pantry Friendly Tomato sauce" It has white wine in it, however I use dry vermouth and I like it better.

He also has a Coq au vin recipe that I haven't tried.
