French marketing ploy.

People have been putting wine with food for decades.

Add some crunchy sour dough bread, prusciutto, salami with Manchego, Gorgonzola, wallnuts and a great red Zinfandel and you've gota GREAT meal, dude!

there is all different types of cheese for all different types of wine. Cheese happens to pick up the taste of the wine.

At it's most basic you're pairing a fat and an acid and that's always a good combo.

A celebration of the effects of bacteria acting on one food to turn it into something better.

Bread, cheese, wine, beer, liquor, vinegar, all involve the miracle of fermentation, well cheese is a little different, but it's still bacteria acting on food.
