As a former chef and very fond of Alsacian wines, if it is a Reisling or Pinot Gris even a Gewertztraminer, it goes well with fish, fowl and seafoods. I like it cold.

Most Alsacian wine are not to dry, not sugary sweet but do tend to be a bit more alcoholic than others, and they do as you have a 10 yr old one keep better than other white wines in storage, I would drink it in the next 2 years for the best taste and quality.

Which grape? It makes all the difference.

I love ALSATIAN wines. Hugel makes very traditional wines from all historic Alsace varietals including GewURZTraminer. They actually own the oldest barrel still used for making wine.
1997 was a good, not great year and most of Hugel's wines are as good as they're going to get if not wound up. The SGNs and Hommage wines are still strong but the rest are heading on the downside of the slope.
As for pairing it would be depending on the varietal. The wine will most likely be more subtle now than it was 5 or 6 years ago. Shellfish, sea bass, coq au vin, tarte flambée (one of my favorites dishes of the region) could all work.
