I would say something like a good oaky cabernet in teh winter, or a pinot nooir in the summer... is definitely not a white wine cheese unless you want to do a sweet desert wine...

I would say white wine from Switzerland, the Valais region. But that's a little hard to find.
Basically though, the best is a dry white wine. If you're doing a mainly cheese raclette. If you plan on also cooking meat, you could have red or white wine.
