A true spanish sangria has only two types of spirits: brandy and an orange based liquor: either Cointreau, Triple Sec or Grand Marnier.
Any other spirits (rum, gin, vodka etc.) will not add the right flavour...they'll just make it too potent. Also it isn't a "tropical punch", it uses oranges, lemons and apples not pineapple or other tropical fruit.
Don't make it too far in advance...the fruit might make it ferment if it's done more than a day before. (In a warm climate).
I've been living in Spain for the last 35 years, and this is the spanish recipe I've always used....

Sangria
for 6 to 8 persons

2 or 3 bottles of red wine.
2 large bottles of lime or lemon soda (colourless)
2 large bottles of orange soda (1 lt. size at least)
2 oranges (large)
2 or 3 lemons
2 apples (golden delicious or granny smith)
2 or 3 tablespoons of sugar (to your taste)
2 pieces of stick cinammon (crush a little with your fingers to bring out the essential oils flavour)
1 glass of brandy
1 glass of orange based liqueur (Cointreau, Triple Sec, Grand Marnier or similar)

Peel and dice the fruit, place in a bowl with the sugar, cinammon, brandy and liqueur. If the liquid doesn't completely cover the fruit add a glass of orange juice.
Allow to marinate for at least 4 hours. (I usually make it about 12 hours ahead of time, leaving it that long allows most of the alcohol to evaporate but retains all the flavour, that way it doesn't go to the head so easily).
Place everything together in a large punchbowl, stir and allow to blend for a little while before serving.
You can add icecubes to keep it cold, and if you freeze some orange soda or juice instead of water, you can keep the sangria from getting too "watery" with the ice cubes.

There is a variant made with white wine instead of red... It's called a KAP
Use the same ingredients, but use half a glass of brandy and the other half of vodka.
Also use peaches with/or instead of the apples. If fresh peaches are not in season, replace with canned ones, and add the syrup to the fruit mixture instead of the sugar.
Another suggestion...if you make juice icecubes add a maraschino cherry to some of them, it looks nice and adds a touch of sweetness..
Also, if you are handy, peel the lemons and oranges in one piece in a spiral and keep the peels to adorn the edge of your punchbowl.
It all depends on how creative you are.
If you need a larger quantity, just double or treble the ingredients...

1 large bottle red burgundy wine
1/2 Bottle light rum
4 Shots cointreau
6 Shots vodka
4 Shots liqueur grand marnier or cointreau, orange flavor
1 litre soda water
1 each pineapple sliced
4 each apples tart
6 each oranges sliced
1 quart apple juice or pineapple juice
1 quart orange juice
2 each limes sliced
1 x sugar to taste

Directions
Slice fruit and place on bottom of large container/bucket (with
attachable lid).

Add juice.

Add alcohol and sugar.

Just before serving add ice and seltzer.

Keep refrigerated and covered.

Best when made a day or two in advance.

Pour wine in the pitcher and squeeze the juice wedges from the lemon and orange into the wine. Toss in the fruit wedges (leaving out seeds if possible) and add sugar and brandy. Chill overnight. Add ginger ale or club soda just before serving.
If you'd like to serve right away, use chilled red wine and serve over lots of ice.

Addition ideas: sliced strawberries, peaches, handful of fresh blueberries, raspberries, kiwi, a shot or two of gin, brandy or rum, a cup of ginger ale, citrus soda pop or lime juice.

Party Sangria
Just Double Ingredients

INGREDIENTS:
1 Bottle of red wine (Cabernet Sauvignon, Merlot, Rioja, Zinfandel, Shiraz)
1 Lemon cut into wedges
1 Orange cut into wedges
1 Lime cut into wedges
2 Tbsp sugar
Splash of orange juice
2 Shots of gin
1 Cup of sliced strawberries or raspberries (may use thawed or frozen)
1 Small can of diced pineapples (with juice)
4 Cups ginger ale
PREPARATION:
Pour wine in the pitcher and squeeze the juice wedges from the lemon, orange and lime into the wine. Toss in the fruit wedges (leaving out seeds if possible) and pineapple then add sugar, orange juice and gin.
Chill overnight. Add ginger ale, berries and ice just before serving. If you'd like to serve right away, use chilled red wine and serve over lots of ice. However, remember that the best Sangrias are chilled around 24 hours in the frig. - allowing the flavors to really marinate into each other.

Sangria is a mix of wine (normally red wine) and hard liquor. Think of it as fruit punch for the adults (fruit punch + liquor). It's a party beverage which goes well with all kinds of food. But being as it is made from wine, then use:
a) red wines -- goes best with meat
b) rose wine -- with poultry
c) white wine -- best with fish or seafood
So, you can make a sangria with all these kinds of wines. If you don't know the menu in order, then use red wine.

Sangria Maiden's Hic-Hic
Ingredients:
1 bottle of wine
1/2 cup Rum or Brandy or Cognac or Vodka or Gin or Whiskey (not Bourbon)
1/2 cup Cointreau or Triple Sec or Grand Marnier
1/2 cup orange juice --- chilled
1/2 cup apple juice --- chilled
2 Cups ginger ale or club soda or sparkling water --- chilled
1 shot glass of lime juice
1/2 cup sugar (may vary depending on sweet tooth)
Random fruit cut into wedges or chunks (as desired, at least 4 different fruits)
Preparation
Mix all ingredients together. Toss in some ice cubes and serve the mixture by spooning out with a laddle into cups with the fruit and liquid.

Customize it with things YOU like!
You could use other juices like pineapple, strawberries, etc.
For 10 Gallons it would be like about 5 times this recipe
Fruit to use (seedless):
Orange, lemon, apple, peach, nectarine, cherries, grapes , kiwi, strawberries, mango, melon, pears, pineapple, limes, blueberries, tangerine, raspberries, etc.

A long time ago, after I came back from living in Spain, I had the pleasure of meeting Ms. Marimar Torres of the Torres Winery of Spain in California. I asked her how to make sangria. Ms. Torres recommended:

1) 750 ml. bottle of drier red wine, such as Torres Corona or Marques de Caceres from Spain; other wines such as Merlot and Burgundy do just as well

2) one shot of gin

3) one and a half shot of Gran Torres or Gran Marnier liquer.

4) one 20oz bottle of Sprite.

5) Add sugar to taste

6) Add lemon, orange and peach fruit at the end- use rinds to decorate

She said that some people also add brandy.

There you have it... I love it... have fun at your party...

You will need 50 (750 ml.) bottles.

Sangria Classic

Juice of 25 Oranges
50 bottles (750 ml. each) dry White wine
6-1/4 tbsp. Sugar
3-1/8 pts. (50 oz.) Brandy
3-1/8 pts. 50 oz.) Cointreau
25 Oranges in thin slices
50 Lemons, in thin slices
100 cups Ice cubes
50 cup Club soda

Combine orange juice, wine, sugar, brandy and Cointreau. Add lemon and orange slices. Chill. To serve, add ice and club soda, stir gently. Serve in a pitcher.
