MOST coffee starts with arabica coffee beans. Where those beans are grown contribute to the flavor. Arabica grown in Hawaii (kona) or Jamaica (jamaican blue mountain) are prized beans as are some columbian beans.

Once you pick the beans, the roast separates them. French roast is a very dark roast (basically roasting the beans for a longer time period until they are darker). Espresso roast (Italian) is also dark. The roast for most cans of coffee in your supermarket is referred to as commercial roast.

After you pick the roast for your coffee, the preparation matters.

Turkish coffee is basically coffee grounds boiled in a special turkish coffee maker (a small pot with a handle). Sugar is added. You pour the coffee into small cups and you let the grounds settle to the bottom but invariably eat some. Greeks make their coffee in a similar matter.

Italians are best known for the espresso (bean described above) ground fine and made with an espresso machine that basically uses a pump to force the water through tightly packed espresso into 1 - 2 ounce shots. You can either drink the espresso as is or make other drinks like cappucino, latte....etc

My favorite french preparation is cafe au lait. (similar to a latte).
