If a drink is served "up" what does this mean?

you mean straight up? because that means by itself, like with nothing else mixed, and no ice

rock = on ice
up = no ice

"Up: A drink served up should be mixed with ice, for example in a cocktail shaker, but then strained so there is no ice in the drink when it is served cold."

If you mean 'straight up' just serve straight from the bottle to the glass.The drink doesn't contact with any thing else.
If you mean only UP
pour a beer to the glass straight until the bottom of the bottle is UP.

straight up with nothing added and no ice . just liquor and glass.
