Do bartenders bring their own fruit and tools to the bar?

In an apple martini some bartenders put in an apple for the garnish and it required that the bartender brings their own apples because the bar did not have them, what kinds of bars require bartenders to do things like bringing their own supplies Like fruit and vermouth sprayers ?

i've never had to, nor have i ever known anyone that had to. i've always worked at bars that had fully stocked kitchens though.
