Good Recipe Idea for Dinner?!
and also a desert. I wanted to do something along the lines of chicken and mashed potatoes with lemon meringue pie ? but they don't go together very well.
any suggestions ?
make a beer glazed chicken breast with carmelized onion smashed Potatoes
and desert make a classic BlackBerry Cobbler and sass it up with a lemon sorbet.
2 cloves garlic
1/4 sweet onion
1 sprig of thyme
Saute in a small sauce pan over Medium heat with 2 Tbsp butter and 1 tsp Olive Oil until it very soften and golden brown. remove thyme sprig.
Turn the heat up to Med-High add:
1 Tbsp Brown sugar OR Molasses
when it just starts to carmelize deglaze the pan with:
1 Killians Irish Red
Turn heat to simmer and simmer until the glaze is reduced by half to 2/3. If it gets too thick you can always add 1 Tbsp of Chicken stock to thin it back out. to get a very smooth glaze you can also use your immersion blender to puree the onion and garlic bits.
In a large saute pan over Medium heat saute:
the remainder of the onion, Sliced
1 Tbsp Butter
1 sprig of thyme
Remove onions when golden and set aside, discard thyme sprig
Preheat oven to 350F
While the onions are cooking season your chicken breast with S&P and then lightly dredge in flour. after you remove the onions. Saute the breast over Medium High heat, just until a nice golden crust forms (Always cook smooth presentation side down First) . When you have achieved the color of the crust you want move the breasts to a baking dish and brush with beer glaze. Bake for 25-30 minutes just until chicken is no longer pink and juices are clear. Avoid over cooking.
Boil 2 Yukon Gold potatoes until tender.
Dice the cooked Potatoes and smash in 2 Tbsp butter and enough butter milk to make them creamy. Don't over mash, There should be skin and Lumps in the potatoes. Stir in the onions and place into a ramiken. Top with a sprinkling of cheddar cheese for color and crust and broil for 4-5 minutes until cheese is melted and browning and potato peeks start to get crisp. You can also add crumbled crisp bacon to this recipe.
a third dish to round out the meal would be a variation of chopped salad with a citrusy vinaigrette. Kale as your salad green (slice it thinly) and toss it with thawed frozen corn, thawed frozen peas, Diced tomatoes, s/p, and a lemon vinagrette made with lemon, white wine vinegar, dijon mustard, poppy seeds and olive oil. If it gets to acid you can always tame it down by cutting some mayo in and making a creamy lemon dressing
For the berry cobbler I would make a berry syrup using sugar, white wine, and 1 pkg blackberries, when it's thickened poor it over another pkg of fresh blackberries, place that mixture in a butter ramakin and top with Phylo or Puff Pastry (you could also cut out shapes from the sheet so the berries bubble through. Brush the top with butter, and sprinkle with sugar. bake according to dough directions. For the Lemon Sorbet. Make a fresh lemonade with Honey as the sweetened, add in some poppy seeds for interest, and a little cream, about 1/3 the total volume of your lemondade. Toss it in an ice cream maker or put it in a pan and stir it every half hour as the ice crystals form. A machine will give you a smoother consistency which will work better with the cobbler.
You'll have thyme which has a lemony flavor and actual lemon running throughout the dish without over powering any of it to tie the entire meal together.
well for dinner tonight im making lemon pepper chicken breast with fresh pesto pasta with some veggies ( not sure what kind yet, although im thinking asparagus ) as for desert you can either due to lemon pie or even just a fruit sherbet.
I'd go with some Potatoes and Ham with some mushrooms and peas with a little Onions and jalapenos!
