Baking cookie techniques?!

Question: Baking cookie techniques?
Hi, i'm 13 and i like to bake. I bake cakes, tarts, and pies. Recently i tried baking cookies but they didn't turn out as i expected. They were hard and they stuck to the baking sheet. I made three batches and they all turned out like this. I followed the instructions on the recipe. Does anyone know what i might be doing wrong?


Chances are you over baked them. They should JUST be golden around the edges and still look a little soft and a bit wet looking in the middle. When you bake there is such a thing called "carry over". It means that there is all that heat still in the cookies and they are still baking even though they are out of the oven, therefore you must take them out BEFORE they are all done. Cookies are trickier to bake than most think. They are small and there isn't much room for error. Good cookie sheets are a must. The heavier the better. Put down parchment, then the cookies. While those bake you can be getting the next batch ready on parchment. Then swap them out. Good luck and keep trying. Get a different recipe to try. Swap out some flour for old fashioned oats, they keep the cookies chewy.

Hard cookies: Given that the problem isn't a bad recipe or stale ingredients (especially the rising agent): Do not over-mix dough or over bake cookies. Just mix enough to combine ingredients.

As a baker you probably already know about baking in a preheated oven.

After removing your tray from the oven, let the cookies set for a few minutes before sliding a spatula under them to loosen and either place the cookies on a rack to finish cooling or leave them on the tray. (If you slide a spatula under some cookies right after removing them from the oven, they will crumble.) Without parchment paper under them, my cookies also stick if I don't get to them and loosen from the tray before cookies get cold.

Perfect Sugar Cookies

2/3 cup shortening
2/3 cup butter
1 1/2 cups sugar
2 eggs
2 teaspoons vanilla
3 1/2 cups flour
2 teaspoons baking powder
1 tsp salt

Preheat oven to 350* Cream together shortening, butter and sugar. Stir in the eggs and vanilla. Combine the flour, salt and powder and blend into the creamed mixture. Shape into balls and place on ungreased cookie sheets. Bake for 10-12 minutes or until lightly golden brown. * You may also roll them in some sugar just before placing on the cookie sheets for some extra decoration

It could be too much sugar. It would of helped to know what kind of cookies specifically. But hard cookies are usually due to too much sugar. I have been baking cookies for many, many years and I know these things just from experience. When I have a recipe that doesn't come out to my expectations, I look for a new one and try that next time, and if it works, I keep it, until, or if, I find something better! ;)
