How can i season some new poatoes?!
Melt a little butter in a pan (or use a couple of tablespoons of olive oil if you prefer) over a low heat and add a crushed clove of garlic.
Cook gently for a couple of minutes and then add your potatoes to the pan with some salt, freshly ground black pepper and a sprinkling of fresh (or dried) thyme.
Heat through for a couple of minutes and swirl everything around in the pan to make sure that the potatoes are completely coated in the butter and the seasoning. I actually cut my potatoes in half when I make them this way so that the flavor is even more intense.
Serve with the pan juices poured over the top and sprinkle with more thyme - fresh really is better if you can get it.
At the site below, you'll find a recipe for CRASH HOT POTATOES. I haven't made them but they look and sound good. I'd suggest using chopped rosemary as the herb component.
Or you could go another way and make RED HOTS. Either cut the potatoes in half or remove a "belt" of skin from around the middle of the potato. Season boiling water with salt, at least a tablespoon of crushed red pepper, a few splashes of Louisiana Hot Sauce or Tabasco, and a few Bay Leaves. Then boil the potatoes until done. The potatoes will absorb the seasoning as they cook. Just serve as is or butter them if you prefer.
Boil the potatoes in veg stock (use a cube), add a sprig or two of fresh mint then when cooked add butter and black pepper before serving. Simple, tasty and not too much when added to the chicken dish.
I had some at a party once that were served with butter and rosemary. You know they were good if I still remember it after 10 years.
