Question: Can you share your crumpet recipe with me please?
A few of us girls would like to watch the upcoming royal wedding and have a what we are calling "the superbowl for girls" party. We are going to do some fun and cheesy things, like wear homemade crowns, and I would like to serve tea and crumpets. Please share your recipe. Also, if you can think of any other traditionally British foods I could serve, please make a suggestion! Thanks!!

Answers:

3 - 1/2 cup all-purpose flour
2 Tablespoon butter, melted
2 teaspoon salt
2 teaspoon sugar
2 - 1/2 teaspoons dry yeast
1 cup warm water
1 cup warm milk
1/2 teaspoons baking soda dissolved in 1/4 cup warm water

1.In a bowl stir together yeast and water. Let stand for 5-10 minutes. Add warm milk, butter, salt and sugar. Add the flour and stir until the batter become smooth. Let stand for 30 minutes.
2.Stir in soda dissolved in water, leave to rise 20 to 30 minutes.
3.Grease griddle and heat over medium-low heat. Drop batter into crumpets rings. Reduce heat to low, cover griddle and cook crumpets until tops look dry, about 10 minutes.
4.Flip them over and cook for a couple of minutes. Serve toasted with butter or with cheese melted under the grill

If you don't have a "crumpet" ring simply use a large round metal cookie cutter. Or you could even find crown and princess shaped cookie cutters I'm sure so that your crumpets are themed for the royal wedding.

You could also top them with smoked salmon and cream cheese, nutella, poached eggs. All kinds of things.
