Saudi Arabian Roasted Chicken Al-Kabsa

1 whole baby chicken, cut into 4
3 tablespoons olive oil
1/8 teaspoon turmeric
1/2 teaspoon baharat (Middle East Mixed Spices - the Real Mix)
1/2 teaspoon kabsa spice mix (Saudi Kabsa Spice Mix)
salt
3 sprigs cilantro

Preheat oven to 350°F. De-skin the chicken (optional). Season with spices & olive oil. Place in a roasting pan & into the oven for 40-50 minutes. Garnish with cilantro & serve with cooked basmati rice. Enjoy

Serves 2.

Baharat Middle Eastern Spice Mix Recipe

1/2 cup whole black peppercorns
1/4 cup whole coriander seed
1/4 cup cassia or cinnamon bark
1/4 cup whole cloves
1/3 cup cumin seed
2 teaspoons whole cardamom seeds
4 whole nutmegs
1/2 cup ground paprika

Basically, just place all the spices except the paprika & nutmeg in a blender or adequate grinder (coffee bean grinder works great) & process until it becomes a powder. If necessary you can grind 1/2 cup at a time. Grate the nutmeg & blend this with the paprika into the spices. Store in an airtight jar.

Generally in some areas, they lightly toast the spices in an oven to bring out more flavor. You can gain this also by putting the amount you're going to use, on a hot dry fry pan & toast it for a few seconds before using. This not only makes the kitchen smell good, but brings out a richer flavor of any spice. *Note* You can also use ground spices, but using them whole is the authentic way. Four nutmegs come to about 1/4 cup ground. Be careful how much nutmeg you use; it's toxic in large doses.

Makes 2 cups of spice mix.

Saudi Kabsa Spice Mix Recipe

1 teaspoon turmeric
1 teaspoon coriander seed
1 teaspoon black peppercorns (1/2 teaspoons if you don't want it hot)
1 teaspoon black cardamom pod (not to be substituted with green cardamom)
1 teaspoon ginger
1 teaspoon fennel seed

Blend in a coffee bean grinder until crushed. Use as desired. Makes 6 tablespoons.

Roast Chicken

This will make the most juicy, well seasoned chicken ever. Your guests will love it. It only takes 10 minutes to get it ready & 2 hours later it's fall off the bone tender, juicy & delicious!

1 whole chicken
1/3 cup white wine
1/3 cup chicken broth
1 medium onion, cut into 3-4 pieces
4 whole garlic cloves
2 tablespoons butter, room temperature
Rosemary
Thyme
Sage
Black pepper

Turn the oven on to 350*. Remove the giblet bag. Rinse the chicken with water, inside & out. Pat dry with paper towel. Make the herb butter by stirring in 2 teaspoon rosemary, 1 teaspoon thyme, ? teaspoon pepper & sage. Loosen the skin over the breast & thighs & rub some of the herb butter mixture under the skin.

Put more herbs into the cavity of the chicken (Rosemary 3 teaspoon dried – Thyme 2 teaspoon dried – Sage 1 teaspoon dried). Fill cavity with onion & garlic.

In a saucepan large enough to hold the entire chicken pour the white wine & broth. Set the chicken in the pan breast up, put the lid on & put it in the oven. Roast for 2 hours.

Lemon Garlic Roasted Chicken

4 to 5 pound chicken
2 tablespoons lemon juiced
3 cloves garlic, minced
1?2 teaspoon ground black pepper
1 teaspoon salt
1?4 cup butter, softened

Rinse chicken in cold water. Combine remaining ingredients & rub over skin & between skin & meat of chicken. Place roasting rack in cooking pan.

Place chicken on roasting rack & cover. Bake at 350°F for 11?2 hours, reduce heat and increase time for crispier, darker skin, until internal temperature reaches 175° F in all parts of the chicken.



I like to mix chicken broth with garlic salt and put it over my chicken. I also slice up a lemon and put it over it. I like broccoli and cheese rice to go with it. I am a big garlic fan so most of my cooking involves garlic. very good. but just my opinion its up to you. hope that helped.

Smear it with curry paste and cover it with rashers of bacon too.
