You can serve a hearty red wine with roasted root vegetables like carrots, sweet potatoes, parsnips and winter/fall squashes, especially when tossed with some good olive oil and fresh rosemary. A hearty chickpea stew with tomatoes or a curry flavor could also be served with a red wine.
A dry white works well with grilled vegetable shish kabobs like zucchini, eggplant & muschroom combos or even a gazpacho.
If you're making any stuffed vegetables or even a vegee lasagna, you could serve a semi-dry white like a Reisling.
Desserts could be served with champagne or a Port wine, which is sweet enough to be dessert on its own, could be served with just some vegan cookies.

Making a vegan meal that doesn't taste like cardboard is very difficult, however, so whichever wine you choose, consider stocking plenty for the benefit of your very patient guests.
