How come most meats have to be refrigerated, but not beef jerky?!
They dry the beef jerky then package it, unlike most meats, it does not contain blood in it, therefore it doesn't have to be refrigerated to preserve it and keep it fresh.
Because beef jerky is dried while most other meats are fresh and most likely still contain blood
A side hint. Dried food can stay out. Any food that has liquid in it goes to refrigerator.
Beef jerky has been treated with salt and other junk to take out the moisture
It's dried...like raisins don't go mouldy but grapes do.
