Vegetarians...what vegetarian option do you want to see on a menu?!


Question: Vegetarians...what vegetarian option do you want to see on a menu?
I'm a chef putting together a top menu. Ideas please!!! As a non-vegetarian I want to know what you guys want to eat if you went out to an expensive restaurant.

Answers:

Are you looking for any particular theme? International cuisine? Here are some ideas:

Appetizers/Dips (they should all be served with toasted pita)
-Melitzanosalata (Greek eggplant dip)
-Muhammara (it's a Syrian hot pepper, crumbly dip)
-Hummus (can be flavored a number of ways)

Soups
-Creamy vegan Corn Chowder
-Turkish red Lentil Soup
-Soba noodle soup with shiitake mushrooms

Main Course
-Teriyaki Seitan + Broccoli on a bed of rice
-Red Bliss Potato Casserole
-Quinoa Pilaf with Mixed beans, vegetables and Saffron threads

As for desserts, vegetarians will have an entire list to choose from, but perhaps have one dairy and egg-free option for the vegans and lactose intolerant? Something like vegan peanut butter brownies with sorbet?



Portobello Burger with pesto,mozzerella cheese,red onion!

Panini with portobello,mozzerella,tomato, & basil. Or even eggplant would be good instead of portobello

Any good pizza will make me happy!

A salad with lots of yummy toppings... avocado,egg,roasted red pepper,cheeses,olives,croutons,& the usuals,etc (obviously these all don't have to be on one salad)

There is a restaurant called Yardhouse and they actually have a menu with lots of vegetarian options because they use a veggie meat product called Gardein. They can make veggie buffalo chicken,burgers,etc.

One of the best meals I've ever had consisted of:
Chive raviolis stuffed with crimini mushrooms with a garlic wine sauce.

You could try a fancy mac&cheese!

I think it would be easier if you had vegan options on the menu instead. When I was a lacto-ovo vegetarian there were many vegan meals I ate happily.
If a vegan comes in and sees only vegetarian items (that are made with dairy) they will be frustrated.

Here's some vegan foods: (any dish can be made vegan BTW)
Enchilada bake (made w/ vegan cheddar)
"Cheese pizza" w/ "hot wings"
Black bean burritos w/ rice
Marinara spaghetti w/ Chick peas
Lentil Soup
"Beef stew"
Curry tofu
Tofu vegetable soup

Appetizers:
Cashew butter dip w/ pretzels
Celery and peanut butter
Salad w/ sesame seeds
Blue corn chips, bean dip, avocados and pico de gallo

Vegan drinks: Green tea, steamed latte made w/ nut milk, carrot juice, apple juice, etc.

For appetizers, I'm a big fan of mini veg spring rolls or marinated tofu with a sweet chilli dipping sauce.
