Question: Banana bread love it so much help?
I love banana bread does anyone know a good recipe?


Banana Bread

? cup softened butter
1 cup sugar
2 eggs
3 medium size ripe bananas, mashed with fork
2 cups flour
1 teaspoon baking soda
? teaspoon baking powder
? cup chopped pecans (optional)

Cream the butter and sugar. Stir in the eggs and bananas. Stir the flour, baking soda and baking powder together. Stir into the wet mixture and mix with pecans, only until combined. Pour into buttered loaf pan. Bake at 350?F. for 45 minutes to an hour until done. Cool before slicing.

The secret to good banana bread is to have the bananas nice and ripe, mostly black with some yellow still showing through.

3 or 4 ripe bananas, smashed
1/3 cup melted butter
1 cup sugar (can easily reduce to 3/4 cup)
1 egg, beaten

No need for a mixer for this recipe. Preheat the oven to 350°F (175°C). With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.

Yield: Makes one loaf.
