Egg Flower Soup
This is the way I was taught to prepare egg flower soup in my culinary classes. I'm not sure if it's the exact same way as they would prepare it in China, but the results are definitely very delicious! It serves between four & six people, depending how hungry everyone is.
4 cups beef broth
2 eggs
2 teaspoons oil
2 chopped green onions
2 tablespoons soy sauce
1 teaspoon vinegar
1/8 teaspoon pepper
1/2 teaspoon Accent
Bring the broth to a boil.
Beat the eggs & oil together & pour into the broth in a slow, steady stream.
Stir in the green onion, soy sauce, vinegar, Accent, & pepper.
Bring to a boil again & serve.
Note: Accent is what we here in America call Monosodium Glutamate. It is commonly used in Oriental cuisine. It isn't popular here because many people are allergic to it. It can easily be left out & it wouldn't affect the taste of your dish very much.
