What's something relatively healthy besides salad to make with chicken patty sandwiches?!

Try some oven baked sweet potato fries. Preheat the oven to 400 degrees. Rinse the sweet potatoes with cold water, scrubbing with a vegetable brush or paper towels. Dry the sweet potatoes and cut into wedges. Spray the wedges with cooking oil spray (Pam) or toss with a bit of canola or olive oil. Sprinkle with some Cinnamon, then bake for about 30 minutes until the outside is crisp and the inside is soft. Sweet potatoes can help control diabetes.
Chickpeas (canned are fine) mixed with some fresh chopped parsley, crushed garlic and little vinegar and oil. Ok it is a salad, but not a green salad.
You can also top off your chicken patty sandwiches with lettuce and tomato for a complete meal on bread or a bun.
Brown rice pilaf. Just finely chop some onions. Heat 1 tablespoon olive in saute pan, add the diced onions, saute til soft, add the rice and stir for a minute or so, then add the amount of liquid recommended on the box. Usually, 2 cups of liquid to 1 cup rice. I prefer using low salt chicken broth to water. Finish cooking as directed. You can also add chopped mushrooms, diced tomatoes and/or green pepper and saute with the onions.

cucumbers, onions, and tomatoes(all cut into bite size pieces) marinated in italian dressing. Good for picnics too! Macaroni Salad. Maybe egg salad(never made it). Baked Beans. yumm.
Some nice steamed vegetables with a bit of olive oil and sauteed or some melted butter is nice. Or some nice. Some nice bean salad with red onions oil and vinigar is good too.
Try macaroni salad, pasta salad, pea salad but use yogurt instead of mayo and add fresh veggies.
Rice with rapini is delicious.
