green bean recipe?Please help!?!
I like to saute my green beans (often the long green beans from Asia) then add some balsamic vinegar and a little butter, or roast them in the oven with a bit of oil and balsamic vinegar.
Another favorite is sauteing them in oil, then and adding lemon juice, parsley and a bit of butter toward the end.
(for sauteing, I usually cut them into medium to short segments--sometimes with angled ends)

Green bean bundles are a nice side dish, and since theyre in bundles you do the portioning before serving them up so you wont run out.
This recipe serves 8 but you an adjust to the amount in your party.
1 pound fresh green beans, trimmed
8 bacon strips, partially cooked
1 tablespoon finely chopped onion
3 tablespoons butter, margarine or bacon drippings
1 tablespoon white wine vinegar
1 tablespoon sugar
1/4 teaspoon salt
Cook the beans until crisp-tender. Wrap about 15 beans in each bacon strip; secure with a toothpick. Place on a foil-covered baking sheet. Bake at 400 degrees F for 10-15 minutes or until bacon is done. In a skillet, saute onion in butter until tender. Add vinegar, sugar and salt; heat through. Remove bundles to a serving bowl or platter; pour sauce over and serve immediately.
To make a bit healthier omit the bacon and use bell pepper strips, citrus peels, a green bean, slice a cucumber and cut out the insides making it a ring to place the green beans in.
Well if you like something crunchy, here is a fried green bean recipe, but with fried chicken, I would also add something light with it, to complement the meal (like salad) but here is the recipe, I made it and it was good. Or you could steam them and add sauted garlic or a bit of butter.
Fried green beans
* Peanut oil, for frying
* 1 cup beer
* 1 cup all-purpose flour
* 2 teaspoons salt, plus more for seasoning
* 1/2 teaspoon ground black pepper, plus more for seasoning
* 1 pound green beans, ends trimmed
Preheat oil to 375 degrees F.
Whisk the beer, flour, salt and pepper until smooth.
Dip green beans into batter to coat, letting excess drip off. Fry in the peanut oil in batches, until they are golden and crisp. Remove from oil with a spider strainer to a paper towel lined sheet tray. Sprinkle with salt and pepper.
Also, I like steamed green beans, with garlic sauted in olive oil.
Green beans with cranberries
* 2 lbs fresh green beans, trimmed (can use frozen beans that have been thawed to room temperature)
* 2 tablespoons butter
* 1 sweet onion, sliced (such as Walla Walla, Vidalia, etc.)
* 4 tablespoons dried cranberries
* 1 orange, juice and zest of, medium
* 2 tablespoons aged balsamic vinegar
* 3 tablespoons tangerine- pomegranate juice (such as PomWonderful, or a blend of cranberry and orange juices, read *NOTE)
1. 1 *NOTE: I used 1 tablespoon freshly squeezed tangerine juice, 1 tablespoon pomegranate syrup and 1 teaspoon sugar in place of the PomWonderful.
2. 2 In a pot, steam green beans until fork-tender, 5 minutes for small green beans but as long as 15 minutes for larger green beans.
3. 3 In a large skillet, melt butter; add sliced onions and cook over low heat until translucent. Turn up heat slightly and caramelize onions until golden, stirring occasionally, about 10 minutes.
4. 4 Add dried cranberries, orange zest, orange juice, balsamic vinegar, and tangerine-pomegranate juice (or substitution). Simmer until liquid is reduced by half. Just before serving, add green beans; toss to coat and heat through.
Southern people really like their veggies soft but I wouldn't make them the way that they would eat them, I would make them the way you like them and hope that they eat them. I like to saute them with garlic OR a bit of lemon juice. You can add some other veg in with them like mushrooms OR onions.
Green beans and red potatoes go great together. I bet you can roast them together if you cut the potatoes small or par boil them to give them a head start.
Or you can blanch and shock them, then saute them with slivered almonds. You don't need but the tiniest bit of bacon fat or butter to add a lot of flavor...use a non-stick pan to keep it sensible.
You can also steam them with your fav herbs...maybe some dill or some parsley?
Add some pearl onions or slivered almonds or you could use a cheese sauce.
