Almond Poppy Seed Bread

1/2 c!. butter, softened
3/4 c!. sugar
2 eggs
1 c!. non-fat plain yogurt
1 1/2 tsp!. almond extract
2 c!. flour
1/2 tsp!. baking soda
1/4 tsp!. salt
1/4 c!. poppy seeds

Cream sugar and butter!. Add eggs one at a time!. Mix together into a separate bowl!. Mix with other ingredients gradually!. Spoon into 12 lined muffin cups!. Bake at 350 degrees for 20 minutes!.

and a fruit salad on the side with strawberries, blueberries, bananas, some kind of melon (i would have honey dew or instead have kiwi instead of melons), purple/red grapesWww@FoodAQ@Com

For a nice light breakfast, get a clear cup (I use the small plastic kind) and layer in yummy yogurt with fresh strawberries, raspberries, or blueberries (or a combination)!. Start with the fruit!. Fruit, yogurt, fruit, yogurt, and top it off with a little granola!.!.!.!.!.

To make it even more *Special* you could layer it in a clear martini glass, or any other fun specialty glass that looks cool!.Www@FoodAQ@Com

Does she drink coffee!? if so splurge on a special kind- like Jamaican Blue Mountain or her favorite flavor- vanilla, chocolate, etc, and fresh squeezed OJ!.

A basic small omelette, a croissant and a few strawberries would be nice:

One Egg Omelette
1 egg
shredded cheese
smoked paprika or chipotle


Break egg into bowl and whip with fork!. Add small amount of smoked paprika or chipotle (or smoked spice of your choice) to taste!. Whip some more!. Set aside!.

Place small amount of butter in bottom of skillet, place skillet on stove, cut on medium low heat!. Pour in egg mixture!. Place shredded cheese in layer on top of egg mixture!. Step away and do not touch it until it puffs up and the cheese is melted and toasting!. Bottom should be browned on edges and such!. This will take several minutes, do not touch it during this time!. Do you have any sliced ham!? Make her a baked egg with ham and a little cheese in a muffin pan!.

Preheat the oven to 325 F!.
Line muffin cup or custard cup with thin sliced ham!. Add about a tablespoon of shredded cheese - cheddar or swiss or asagio or whatever your mother likes!. Then crack an egg into the "ham cup" and bake for about 13 minutes!. White albumen should look cooked but yolk can still be runny!. Serve with buttered whole grain toast and a glass of OJ!.
