I'm looking for ideas for using using 4 medium sized red skinned potatoes for dinner...?!

Question: I'm looking for ideas for using using 4 medium sized red skinned potatoes for dinner...?
I'm making a London broil with sauteed mushrooms and a garden salad.

What can I do with these potatoes besides baking them, or mashing them. I'd like to try something different. I will be feeding 4 people.

Can anyone come up with something interesting, without being complicated?

I would cut them into quarters, and toss them in 1/3 cup of canola or veg oil and one packet of good season's dry ranch dressing mix. I have done this for years, now and everyone loves it. Bake at 350 for about 40 minutes or until done.

My son and I love these.

Parmesan Potato Rounds

4 medium red potatoes, thinly sliced
1 small onion, thinly sliced and separated into rings
2 tbls butter or margarine, melted
? cup grated Parmesan cheese
? tsp salt
1/8 tsp pepper
1/8 tsp garlic powder

Place half the potatoes in a greased 2 quart or 11 x 7 x 2 baking dish. Top with onion and remaining potatoes. Drizzle with butter. Sprinkle with Parmesan cheese, salt, pepper and garlic powder. Bake, uncovered, at 450 for 25-30 minutes or until potatoes are golden brown and tender. 4 servings.

Well, I love baked potato skins...so this is an easy way to get the flavor but use potato rounds instead:


4 baking potatoes, cut into 1/2 inch slices
1/4 cup melted butter
8 slices bacon - cooked and crumbled
8 ounces shredded Cheddar cheese
1/2 cup chopped green onions


1. Preheat oven to 400 degrees F (200 degrees C).
2. Brush both side of potato slices with butter; place them on an ungreased cookie sheet. Bake in the preheated 400 degrees F (200 degrees C) oven for 30 to 40 minutes or until lightly browned on both sides, turning once.
3. When potatoes are ready, top with bacon, cheese, and green onion; continue baking until the cheese has melted

**TIP>>can top with dollop of sour cream when serving

1/4 cup olive oil
1/2 tsp salt
1 tsp rosemary
1 tsp basil
1/2 tsp paprika
1/4 tsp cayenne pepper

Wash potatoes, cut into 1 inch cubes. I like to add onions to this (cut them also).Bell peppers are also good. Toss with olive oil, salt, rosemary, basil, paprika, and cayenne pepper. Spoon onto baking dish. Bake, uncovered, at 425 degrees for 40 minutes,stirring after 20 minutes.

Then drain the water and place the potatoes in a baking dish. Once you get the potatoes in a dish melt some butter and pour it over the potatoes and then broil them until they begin to brown on top. They are absolutely delicious fixed like this. If you happen to like the skins you can leave them on if you want to.

I'd roast them.... or one of my favorite jewish dishes...
