Red beans & rice, and corn bread. Oh, and a big glass of ice-cold milk, with a slice of deep-dish apple pie. With a dollop of Blue Bell home-made vanilla ice cream on top.

slices in middle, put roast on onion slices,
put pepper on roast, pull foil up around roast
and add 1 cup of water. seal up foil very well.
cook 350F for 3 hours for well done. less time
for medium rare or rare).
au jus gravy (when roast is done, let set for fifteen to thirty
minutes, remove roast and cover until ready
to slice. remove some of the juices from
pan and put in skillet. cook on medium low
heat until reduced to about half original amout
and browned a bit.)
roasted carrots (prepare carrots and potatoes by peeling them
and potatoes cutting them into 2 inch pieces. put in bowl and
pour enough olive oil that the pieces can be
stirred and coated with the oil. place on cookie
sheet. cook on 350F for about 45-55 minutes.
note: can be cooked with roast for last thirty-
forty-five minutes - leave in oven while roast
sets and you prepare gravy).
green salad (variety of fresh salad greens with grape tomatoes,
croutons, dressing, etc.)
cheese biscuits (1cup baking mix, 1/2 cup milk stirred together -
made need more milk to make medium batter.
