Question: Looking for a fun menu idea that doesn't require a lot of work. Details:?
Going on vacation to Mount Desert Island, ME this summer. It'll be a 7 hour drive to get there and we're staying on the "Quietside" of the island. Interpret that to mean few restaurants and no street lights. It's about a 40 minute ride to the other side of the island, the "Funside" but after all that driving I think we'll just want to chill out at the cottage the first night. I don't want to play vacation chef but there are VERY few restaurants on our side of the island and just about everything shuts down at 7pm.
Any ideas what we could do for dinner that first night? The only nearby pizza joint has iffy reviews or we'd just order in.

pack a cooler with snacks that you can have once you get to the cottage. eat at a restaurant on the way for your main big dinner before you get there. look on line for family dining with homecooked meals along your driving route.
i have traveled alot and always pack things like peanut butter, jelly, pretzels, celery and carrot sticks, apple slices, grapes, good munchies for eating and driving. and of course something to drink like water or juice.
buy your favorite brands before you leave, and take the staples with you like salt pepper paper towels. and baggies are very handy to have.
investing in a good cooler will make your trip there and home less expensive and more fun cause you can take a driving break at a rest stop and have a snack too.

Here's a recipe how to make a pizza at your own home. I made it for my mom and my little brothers and the LOVED it. It's SUPER easy.

1 (12in.) pre-baked pizza crust
1/2 cup barbecue sauce (You can chose your own)
1/2 cup diced grilled chicken
1/4 cup chopped red bell pepper
1/4 cup chopped green bell pepper
1/4 cup chopped red onion
1 cup shredded Monterrey Jack cheese
Directions for cooking.
1. Preheat oven to 450 degrees F (230 degrees C).
2. Place pizza crust on cookie sheet. Spread with barbecue sauce. Scatter chicken over top. Sprinkle evenly with red pepper, green pepper and onion. Cover with cheese.
3. Bake in preheated oven for 10 to 12 minutes, or until cheese is melted.
