There is a blood vessel or a vein thing thats in on the roof of your mouth and when it gets cold it leads up to your brain and your brain "freezes". You can press your thumb onto the roof of your mouth and usually your brain freeze goes away.

A. It's really cold

B. The ice cream is evil and it wants to freeze YOUR BRAIN! BRAINSSSS! It's ZOMBIE ice cream! Or is that vampires? Eh, whatevers
Because your brain actually freezes, but then as blood pumps in it melts back.
